Never tried them.  Sonor made a few oak veneered drumsets in their signature days.

I suppose they would sound like a birch drum on steroids- maybe a higher pitched timbre...more attack, louder...oak is usually harder than birch.  We had a tree guy that used to hang around on the eq forum that was really hip to different woods.

Try a set and see if you dig them is all I can say.  All I know is I did not like the Yamaha beech customs.

About a year ago I had my choice of either a Craviotto oak or Craviotto maple snare.  The seller let me tune both drums and then A/B to my heart's content.

Both drums were beautiful and similarly headed and hooped.  The oak drum was particularly good looking.

Soundwise, the maple shell drum was noticeably brighter, with much more emphasis on the higher frequencies.  The oak drum sounded much darker to me.  While crisp, it definitely projected more low frequency sounds.

I finally went with the maple drum, but it was a difficult choice.  There have been times when I rather wished I'd chosen the other way, and would buy the oak drum if it came back on the market.

I'd like to hear a set of Oak Customs, especially in a side-by-side test with identically headed Maple Customs.
